Today I’m featuring a guest post by Lauren. She’s a baller at baking and is going to tell you all about how to make Chocolate Coconut Cookies! I don’t like sweets too much, but I could not resist what she made. Take it away LK!
Before we even start, I do want to say that this recipe has been taken from our resident foodie at MindSnacks. We’ve had these treats a few times, and ever since my first bite, I was hooked and sold. Chocolate. Coconut. Need I say more? I was first introduced to this combo in the form of chocolate macaroons. And Samoas (read: the cookie formerly known as Caramel deLites). But, this recipe goes above and beyond in terms of the different textures and favors that come to life in this cookie.
Now, I don’t really consider myself much of a force in the kitchen when it comes to cooking. I always play it exactly by the recipe, and lack the naturalness with the ingredients that come easily to others. So, that’s why I often turn to baking where measurements are precise and where it all really matters. #OCD
Here is what you’ll need.
Combine dry ingredients with wet ingredients. And mix.
It’ll take some elbow grease if you don’t have a handheld mixer.
These cookies don’t spread out very much, so I packed them onto the tray.
10 minutes later and they’re done!
Simple and delicious, and a huge hit. For anyone with a major sweet tooth, this is your cookie. Drink with a large glass of milk and enjoy!
