Aloo Palak

Quick and Easy

I love Indian food. If you have the ingredients, it’s just real fast and simple. Here is  something I pulled out of thin air because once again, I did not know what to have for dinner. And I held in my hands potatoes and spinach, staring at them until I knew what to do with them. Aloo Palak popped into my mind. For those of you who aren’t familiar with it, it’s just potatoes with a spinach sauce. I’ll show you how to make this at home.

Indian food is about spices. So get some cumin in 1 part,  and garam masala and turmeric (or yellow curry powder) in 2 parts.  You’ll need equal parts of fresh grated ginger and chopped garlic.  Also, you’ll need chopped onions,  chili peppers if you want heat,  tomatoes ( I didn’t have any fresh ones so I used just tomatoes paste) and of course chopped spinach. Spinach cooks down so use about 5 times as much spinach as you have onions.

Cube your potatoes in bite sizes and boil in salted water until el dente. We want it el dente because it will finish stewing with the spinach sauce.  For the sauce, sweat the onions on medium  heat. After about 1 minute or so, add in all the spices. Cook for another minute and then add ginger, garlic and tomatoes. Cook for a bit more and then add in the chopped spinach.  You’ll see it cook down. If it looks too dry, just as a little bit of water to loosen the sauce up. Then add the potatoes, mix, cover, stew on low.  Again add water so it won’t burn as needed. Once the potatoes are to your likely, it’s done! I had it with a side of rice. Great vegetarian dish. Enjoy!
