One of my favorite things, that is terrible for you, is pork skin. I mean the super crunchy and fatty pork skin off of a slow cooked pork shoulder and not the ones from the potato chip aisle. I marinated a 5 lbs shoulder that took about 5 hours to make. I decided then to bake whole corn tortillas (olive oil on them) and make a simple salsa for a bit of a snack/meal dish. What I forgot to show in the picture was a spinach and jalapeno dip I made to go with this. Spread some of the dip on the baked tortilla, add pork, top with salsa, and munch. Really good.
