This is another “use what I got” lunch idea of mine. I basically just took that Chipotle Salmon i had leftover in the fridge and added some minced grilled onions, also from the fridge, one egg yolk, and some seasoned bread crumbs. Pan fried them in a little butter and olive oil. The sauce is made with just mayo, sriracha, ketchup, and a little sugar. Try this idea on leftovers, it works everytime!
