I’m not big fan of cleaning and preparing whole fish…scales freakin everywhere. So if you can get a butcher to do it for you, do it. My mama makes this at home when she doesn’t know what else to make–its that simple if you have the ingredients. I stuffed the belly with onions, green onions, ginger, and parsley (my mom usually uses cilantro), and the braising liquid is made from soy, water, mirin, and I add a little sriracha to give it some spice and sweetness.
